Method
Burger
Form patty
Divide ground beef into a 6 oz portion and gently form into a patty about 3/4" thick and slightly wider than the bun. Do not overwork the meat. Make a shallow dimple in the center with your thumb to reduce doming during cooking.
Season
Season both sides of the formed patty with kosher salt and freshly ground black pepper immediately before cooking.
Toast bun
Heat a skillet or griddle over medium heat. Spread 1/2 tablespoon softened butter on cut sides of the brioche bun. Toast cut sides 1–2 minutes until golden and lightly crisp, then remove and keep warm.
Cook patty and melt cheeses
Place the seasoned patty on the hot skillet/griddle. Cook for 3–4 minutes on the first side without pressing. Flip and cook 2–3 minutes on the second side for medium (adjust time ±1 minute for doneness). On the last 30–45 seconds of cooking, place 1/2 slice white cheddar and 1/2 slice American cheese (stacked) on the patty so they melt together. Remove patty and let rest 1–2 minutes.

Make onion rings batter
Slice the half yellow onion into 1/2" rings and separate into individual rings. In a small bowl, whisk together 1/4 cup all-purpose flour, 1 tsp cornstarch, 1/8 tsp baking powder, and a pinch (about 1/8 tsp) of salt. Add 1/4 cup cold sparkling water or beer and whisk until a slightly lumpy batter forms. Batter should coat the back of a spoon; adjust with a splash more liquid or a teaspoon more flour if needed.
Fry onion rings
Heat 2 cups vegetable oil in a heavy-bottomed skillet to 350°F (175°C) or until a small breadcrumb sizzles and browns in ~15 seconds. Working in a single layer, dredge onion rings in a light dusting of flour (optional), then dip into the batter to coat and carefully place into the hot oil. Fry 1–2 minutes per side until golden brown and crisp. Remove with a slotted spoon to a paper towel-lined tray and immediately season with 1/4 tsp salt. Keep warm in a low oven (200°F/95°C) while finishing burger assembly.
Assemble burger
Spread about 1 tablespoon of barbecue sauce on the bottom toasted bun. Place the cheese-topped beef patty on the sauced bun. Add 3 dill pickle slices on top of the patty, then place two warm onion rings over the pickles. Spread a light smear of extra barbecue sauce on the top toasted bun if desired, then crown the burger and serve immediately.
Sides & Beverage
Serve the burger with the guest's choice of side (fries, salad, or additional onion rings) and their chosen beverage. If serving fries, serve hot and salted; if a salad, offer a light dressing on the side.
