Method
Sliders (makes 2 slider sandwiches)
Prepare buns
Slice the 2 dinner rolls horizontally if not pre-split. Lightly butter the cut sides with half of the unsalted butter (about 1/2 tbs). Set aside.
Make eggs
Crack 2 eggs into a small bowl, add 1 tablespoon milk, 1/4 tsp salt and 1/8 tsp black pepper, and whisk until combined. Heat a nonstick skillet over medium-low heat and add a small pat of butter or 1/2 tsp oil. Pour the egg mixture into the skillet and let it set for 10–15 seconds, then gently stir and fold to form a soft, slightly undercooked folded egg patty about the size of each bun. Cook 1–2 minutes until eggs are softly set but still moist. Remove from heat.
Assemble sliders
Place the bottom half of each bun on a clean surface. For each slider: place one folded egg portion onto the bottom bun, top with 2 bacon strips folded if needed to fit, then place one slice of cheddar cheese on top of the bacon. Close with the top bun.
Melt cheese and finish
Return assembled sliders to the skillet (cut side up or covered) over low heat, cover with a lid for 1–2 minutes just until the cheese melts and the buns are warmed through. Alternatively, place on a baking sheet and bake at 350°F (175°C) for 4–6 minutes until cheese melts.
Beverage (choice, serves 2)
Prepare two servings of the chosen beverage. For coffee: brew two cups according to your machine. For orange juice: pour chilled orange juice into two cups. For soda: pour two cups over ice if desired. Serve alongside the warm sliders.
