Pancakes

Method

Pancakes

1

Make batter

In a medium bowl whisk together 0.5 cup all-purpose flour, 0.5 tsp granulated sugar, 0.5 tsp baking powder, 0.125 tsp baking soda, and 0.125 tsp salt until evenly combined.

2

In a separate small bowl or measuring cup whisk 0.5 cup buttermilk, 0.5 of a large egg (beat one egg and use half), and 1 tsp melted butter until smooth.

3

Pour the wet ingredients into the dry ingredients and stir gently until just combined. A few small lumps are fine; do not overmix.

4

Heat a nonstick skillet or griddle over medium heat (about 350°F / 175°C). Lightly grease with 0.5 tsp vegetable oil or butter and wipe off any excess with a paper towel so the pan is lightly coated.

5

For silver dollar pancakes, pour approximately 2 tablespoons of batter per pancake onto the hot griddle (you should get 3 pancakes). Cook until small bubbles form on the surface and edges look set, about 1–1.5 minutes.

6

Flip the pancakes and cook 30–45 seconds more until lightly golden and cooked through. Remove pancakes to a warm plate and cover loosely with foil while you finish the rest of the plate.

Egg

7

Use the single large egg made your way (fried/scrambled/poached). For a quick fried egg: heat a small nonstick skillet over medium-low heat and add 0.5 tsp butter or oil.

8

Crack the egg into the pan, season with 0.125 tsp salt and 0.0625 tsp pepper. For sunny-side-up, cook undisturbed until whites are set but yolk is runny, about 2–3 minutes. For over-easy, cook 1–2 minutes then flip and cook 10–20 seconds more. For scrambled, beat the egg with a fork, pour into the pan, and gently stir until softly set, 1–2 minutes.

9

When cooked to your preference, remove the egg and keep warm with the pancakes.

Meat

10

Cook the bacon strip: In a separate skillet over medium heat place the bacon strip and cook 3–4 minutes per side until crisped to your liking. Transfer to paper towel to drain.

11

Cook the sausage link: In the same or another skillet, add 0.5 tsp neutral oil if needed, then add the sausage link. Brown on all sides over medium heat, about 8–10 minutes total, turning frequently, until internal temperature reaches 160°F (71°C). If the link is thick, reduce heat and cover for a couple minutes to cook through.

12

Rest the meats for 1 minute, then place beside pancakes on the serving plate.

To Serve

13

Stack or arrange the 3 silver dollar pancakes on the plate. Top with 1 tsp unsalted butter if desired and drizzle 2 tbs maple syrup alongside or on top.

14

Place the egg (prepared your way), bacon strip, and sausage link next to the pancakes. Serve immediately while hot.
