Prepare custard
In a shallow wide dish, whisk together 2 large eggs, 1 cup whole milk, 1/2 tsp vanilla extract, 1/4 tsp ground cinnamon, 1 tablespoon granulated sugar and 1/8 tsp salt until smooth and slightly frothy.
Preheat a large skillet or griddle over medium heat. Add 1 tablespoon butter and let it melt, coating the surface.
Dip each thick-cut brioche slice into the custard, allowing bread to soak for about 10–15 seconds per side (longer for very thick slices) until saturated but not falling apart. Let excess drip off.
Place soaked brioche slices on the hot skillet. Cook 2–3 minutes per side, or until golden brown and slightly crisp at the edges. Add remaining 1 tablespoon butter to the pan as needed between batches.
Keep cooked French toast warm in a low oven (200°F / 95°C) on a baking sheet while finishing remaining slices.
Just before serving, dust the three slices with 1 tablespoon powdered sugar.
Eggs
Decide how the two eggs should be cooked (scrambled, sunny-side up, over-easy, over-hard, or fried). For fried or over-style: heat a nonstick skillet over medium-low, add 1 tablespoon cooking oil or butter, crack 2 eggs into the pan, season with 1/8 tsp salt and 1/8 tsp pepper. Cook until whites are set; for over-easy flip and cook 20–30 seconds longer; for over-hard cook 1–2 minutes longer until yolks are firm.
Meats
Cook the 2 bacon strips in a cold skillet: lay strips flat, turn heat to medium, and cook 5–7 minutes, flipping occasionally, until crisped to preference. Drain on paper towels.
Simultaneously or separately, cook the 2 pork sausage links in a skillet over medium heat for 8–10 minutes, turning frequently until evenly browned and internal temperature reaches 160°F (71°C). Drain on paper towels.
