Method

Prepare Patties

Form patties

Divide the 1 lb ground beef into four equal portions (about 4 oz each). Gently shape each portion into a thin patty slightly larger than the bun (about 4-4.5 inches diameter). Do not overwork the meat; press a shallow dimple in the center of each patty with your thumb to prevent doming during cooking.

Season both sides of each patty evenly with kosher salt and freshly ground black pepper just before cooking.

Cook Patties & Melt Cheese

Heat a large cast-iron skillet or griddle over medium-high heat until very hot (about 3–5 minutes). Add 1 tablespoon vegetable oil and spread to coat the surface.

Place two patties on the hot surface and cook without moving for 2–3 minutes until a brown crust forms. Flip and cook the second side for 1–2 minutes for medium doneness. For a double cheeseburger, stack two patties per burger: after flipping the first pair, briefly press each cooked patty to ensure even contact if needed.

After flipping the top patty of each stack (so both patties are nearly done), place two slices of the chosen cheese on each top patty (choose American, Swiss, or aged white cheddar). Cover the skillet with a lid or a large bowl for 30–45 seconds to melt the cheese.

If cooking in batches, keep cooked patties warm on a plate tented with foil while you finish the remaining patties.

Toast Buns & Prep Toppings

While patties cook, slice the brioche buns in half. Spread about 1/2 tablespoon softened butter on each cut side.

Toast buttered buns cut-side down in a separate skillet over medium heat for 1–2 minutes until golden brown, or toast under a broiler for 30–60 seconds watching carefully to avoid burning.

Slice the tomato into 1/4-inch rounds and season lightly with a pinch of salt. Thinly slice the red onion into rings. Wash and dry lettuce leaves. Have 3 pickle slices ready per sandwich.

Assemble Burgers

Spread mayonnaise on the bottom bun and ketchup and mustard on the top bun if using condiments (adjust quantities to taste).

Place a lettuce leaf on the bottom bun, then a tomato slice, then the bottom cheeseburger patty. Stack the second cheeseburger patty on top of the first so both cheese-covered patties form the double stack.

Top the stacked patties with red onion rings and 3 pickle slices. Cap with the top bun.

Press gently to compact the burger slightly, serve immediately with fries or chips.
