Pat the T-bone steaks dry with paper towels. Rub each steak with olive oil and season both sides with salt, black pepper, and garlic powder. If using, place a sprig of fresh rosemary on each steak.

Preheat your grill or a heavy skillet over medium-high heat until hot.

Place the seasoned T-bone steaks on the grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, adjusting the time based on your preferred doneness. Use a meat thermometer for accuracy (130°F for medium-rare).
