Prepare Olives and Nuts

Rinse and Drain

If olives are very salty or packed in brine, place them in a fine-mesh sieve and rinse under cold water for 10–20 seconds, then drain well. Pat dry with paper towels.

If olives are whole and not pitted, pit them now. Coarsely chop half of the olives (for texture variety) and leave the rest whole or halved.

Toast the chopped walnuts in a dry skillet over medium heat, stirring frequently, until fragrant and lightly browned, about 3–4 minutes. Remove from heat and let cool slightly.

Make Marinade

In a medium bowl, whisk together pomegranate paste, extra-virgin olive oil, lemon juice, honey (or date syrup), minced garlic and minced shallot until smooth and glossy.

Stir in ground cumin, Aleppo pepper (or red pepper flakes), sea salt, and freshly ground black pepper. Taste and adjust balance: add a little more honey for sweetness, lemon for brightness, or pomegranate paste for tang if needed.

Combine and Marinate

Add the drained olives and toasted walnuts to the bowl with the marinade. Toss thoroughly so the olives and walnuts are evenly coated.

Fold in the chopped parsley, cilantro, and mint, reserving a small amount for garnish. Add pomegranate seeds if using. Toss gently to distribute herbs without bruising them.

Transfer the marinated olive mixture to a non-reactive container (glass jar or ceramic bowl). Press down lightly so marinade comes into contact with all pieces.

Cover and refrigerate for at least 2 hours, preferably 12–24 hours, to allow flavors to meld. If serving within 2 hours, let sit at room temperature for 30 minutes before serving to develop aroma.

Remove the marinated olives from the refrigerator 20–30 minutes before serving to take the chill off.

Transfer to a serving bowl, drizzle a little extra-virgin olive oil on top, sprinkle remaining chopped herbs and pomegranate seeds for color, and finish with a light grind of black pepper.

Serve with slices of crusty bread or warm flatbread. Leftover marinated olives will keep in the refrigerator in a sealed container for up to 7 days; bring back to room temperature before serving.
