Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5 minutes or until the vegetables are softened.
Brown the Meat
Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 7-10 minutes.
Add the Liquids
Pour in the red wine, and let it simmer for 2-3 minutes to reduce slightly. Then add the crushed tomatoes, tomato paste, dried oregano, salt, and black pepper. Stir to combine.
Simmer the Sauce
Reduce the heat to low, cover the skillet, and let the sauce simmer for about 30 minutes, stirring occasionally. Adjust seasoning as needed.
Finish with Basil
Stir in the chopped fresh basil just before serving. Serve the meat sauce over your choice of pasta and top with grated parmesan cheese.
