Preheat and prepare dough
Preheat oven to 500°F (260°C). If using a pizza stone, place it in the oven while preheating. Lightly dust a pizza peel or work surface with the 2 tbs flour. Stretch or roll the dough into a 12-inch round, leaving a slightly thicker rim for the crust. Transfer to a floured peel or an overturned baking sheet if not using a stone.
White Pizza Sauce
Cook garlic and make roux
In a small saucepan over low heat, warm 2 tbs olive oil. Add the finely minced garlic and cook gently 30–45 seconds until fragrant but not browned. Sprinkle in 1 tsp flour and stir constantly 30 seconds to remove raw taste.
Slowly whisk in 3 tbs whole milk until smooth. Remove from heat and let cool 1 minute.
In a bowl, combine the warm milk mixture with 1 cup ricotta, 1 tbs grated Parmesan, 1 tsp salt, 1 tsp black pepper and 1 tsp lemon zest (optional). Stir until smooth and spreadable. Taste and adjust salt/pepper. Keep warm or at room temperature until assembly.
Assembly & Topping
Assemble the pizza
Spread an even layer (about 3/4 to 1 cup) of the white pizza sauce over the stretched dough, leaving the outer 1/2-inch rim bare. Distribute the shredded/torn housemade mozzarella evenly over the sauce. Sprinkle the 1 cup grated Parmesan over the mozzarella. Scatter the thinly sliced spring onions across the cheese (reserve a small handful of green tips to sprinkle after baking). Finish with 1 tsp red pepper flakes evenly distributed.
Bake & Finish

Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, rotating halfway, until the crust is golden and cheese is bubbly and lightly blistered. Baking time will vary with oven and stone; watch closely after 8 minutes.
