Muddle mint and sweetener

Place 10 fresh mint leaves and 0.5 oz simple syrup into a sturdy highball glass or shaker. Gently muddle the mint 6–8 times — press to release the oils but avoid shredding the leaves to prevent bitterness.

Add juices and rum

Add 2 oz fresh pineapple juice, 0.75 oz fresh lime juice, and 2 oz Bacardi Pineapple rum to the glass with the muddled mint and syrup. Stir briefly (4–6 seconds) to combine and dissolve any remaining syrup.

Add ice and soda

Fill the glass with about 1 cup crushed ice, leaving room at the top. Top with 2 oz club soda. Gently fold the drink once or twice with a bar spoon to integrate the soda without flattening the bubbles.

Garnish & Serve

Garnish the drink with a fresh pineapple wedge on the rim, a lime wheel on the side, and a sprig of mint placed between the ice and rim (lightly slap the mint on the back of your hand first to release aroma). Serve with a straw and an optional cocktail spoon for stirring.
