Simple Syrup

Method

Simple Syrup

1

Combine sugar and water in a small saucepan. If using, add the lemon zest to infuse a bright citrus aroma.

2

Heat the mixture over medium heat, stirring occasionally, until the sugar completely dissolves and the liquid becomes clear (about 3–5 minutes). Do not boil vigorously.

3

Remove from heat, let the syrup cool to room temperature. If you added lemon zest, strain it out. Transfer the syrup to a clean jar and refrigerate until cold. Yields about 1 cup; use 1/2 cup for the recipe and reserve the rest for other drinks (keeps refrigerated for up to 2 weeks).

4

Prep

Juice fresh lemons until you have 1 cup (about 4–6 medium lemons depending on juiciness). Thinly bruise 8 of the basil leaves by clapping them between your palms or gently tearing to release oils; reserve 4 leaves whole for garnish.

5

Make Basil-Infused Lemon Mixture

In a large pitcher, add the fresh lemon juice, 1/2 cup chilled simple syrup, and the bruised basil leaves. Use a wooden spoon or muddler to gently muddle the basil in the lemon-syrup mixture for about 20–30 seconds—just enough to release aroma and flavor without shredding the leaves into bits.

6

Assemble

Fill the pitcher with 3 cups of ice (or divide ice among individual serving glasses). Pour the basil-lemon concentrate over the ice. Slowly add 3 cups of chilled club soda to the pitcher and gently stir once to combine. Taste and adjust sweetness by adding up to 2 tablespoons more simple syrup if desired.

7

Serve

Pour into 4 serving glasses (about 1 cup per glass). Garnish each glass with a lemon slice and a whole basil leaf. For a fizzy presentation, add club soda to each glass immediately before serving. If using crushed ice, spoon crushed ice into glasses before pouring.

8

Storage / Notes

If not serving immediately, keep the basil-lemon concentrate (lemon juice + syrup + basil) chilled separately from club soda for up to 24 hours; add soda just before serving to retain fizz. Leftover simple syrup keeps refrigerated for up to 2 weeks.
