Prepare glass and mint

Select a large wine glass (or an old-fashioned glass). Add 8 fresh mint leaves into the glass. Using a muddler or the back of a spoon, gently bruise the mint leaves 2–3 times to release aroma and oils. Avoid over-muddling — you want fragrance, not bitterness.

Add ice and liqueur

Fill the glass with ice cubes until about three-quarters full (approximately 1 cup). Pour 1.5 oz St-Germain over the ice and mint.

Citrus

Cut half a lime and squeeze about 0.5 oz (half the lime) into the glass, being careful to avoid seeds. If you prefer less acidity, use 1/4 lime instead.

Top with bubbles

Gently pour 3 oz chilled Prosecco into the glass. Then top with 1 oz chilled club soda. Pour slowly so the drink retains some effervescence.

Stir and garnish

Give the cocktail one or two gentle stirs with a bar spoon to combine ingredients without dissipating the bubbles. Slap the mint sprig once between your palms to release its aroma and tuck it into the glass as garnish.

Serve

Serve immediately while cold and effervescent. Optionally add a thin lime wheel or wedge on the rim for presentation.
