Preheat oven to 400°F (200°C). Trim tops off the two garlic heads to expose the cloves. Place each head on a square of foil, drizzle with 1/2 tbsp olive oil per head, sprinkle with a pinch of kosher salt, wrap tightly and roast until soft and caramelized, about 35–45 minutes.

Remove from oven and let cool briefly. Squeeze the softened cloves from the skins and mash into a paste. Measure out 3 tablespoons for the beef mixture; reserve any extra for other uses.

Combine

In a large bowl combine 1.5 lbs ground picanha, 1/2 cup fine dry bread crumbs, 1 large egg, 3 tbsp minced roasted garlic, 2 tbsp finely chopped parsley, 1.5 tsp kosher salt, 1 tsp freshly ground black pepper, and 1/2 tsp smoked paprika. Mix gently with your hands or a fork until ingredients are evenly distributed — avoid overworking to keep the mixture tender.

Form

Divide the mixture into 4 equal portions for patties (about 6 oz each) or shape into a single 1.5-lb compact steak-style cake depending on service style. Press each portion into a uniform patty about 3/4" thick and make a slight dimple in the center to promote even cooking.

Sear

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Add 1 tbsp olive oil and swirl. Place patties (or the steak cake) into the pan without crowding. Sear undisturbed 3–4 minutes per side for medium (internal temp 135°F/57°C) — adjust time for thinner patties or desired doneness. If cooking a single cake, sear 4–5 minutes per side until a deep brown crust forms and internal temp reaches desired level.

Finish with Cheese

Lower heat to medium-low. Divide or lay 8 oz of shredded/sliced housemade mozzarella over the hot patties/steak so it melts. Cover the pan with a lid or tent with foil for 1–2 minutes until cheese is melted and gooey. If using the optional butter, add 1 tbsp butter to the pan just before removing for gloss and flavor.

Rest & Garnish

Remove the patties/steak to a cutting board and let rest 3–5 minutes to redistribute juices. Sprinkle with the remaining 1 tbsp finely chopped parsley for a fresh finish. Slice if serving as a steak-style cake, or serve whole as patties.
