Method

Caipirinha

1

Prepare the lime

Wash the lime well. On a cutting board, trim off the very ends, then cut the lime into 8 wedges (cut in half lengthwise, then each half into two, then each quarter in half again) so you have manageable pieces for muddling.

2

Muddle with sugar

Place the lime wedges in a sturdy old-fashioned glass or short tumbler. Sprinkle the 2 teaspoons of granulated sugar evenly over the lime. Using a muddler (or the back of a wooden spoon), press down and twist firmly about 20–30 times. The goal is to crush the lime to release juice and oils from the peel and dissolve the sugar, but avoid pulverizing the peel into bits. Continue until the sugar is mostly dissolved and you see a slightly syrupy mixture with released lime juice and oils.

3

Add cachaça

Pour 2 ounces (about 60 ml) of cachaça into the glass over the muddled lime and sugar. Stir vigorously for about 10–15 seconds to combine and help further dissolve any remaining sugar.

4

Add ice and mix

Fill the glass with crushed ice up to just below the rim (about 1 cup). If you only have ice cubes, add them and lightly crush with the muddler or a spoon to chill the drink. Stir well for 10–15 seconds to chill and slightly dilute the cocktail.

5

Garnish and serve

Top with a couple of ice cubes if needed and garnish with an optional lime wheel or wedge on the rim. Serve immediately with a short stirring straw or a classic rocks glass. Instruct guests to give a quick stir before sipping to re-suspend any sugar or lime bits.
