Cook the meat

Place a large skillet or sauté pan over medium-high heat. Add 1 tablespoon olive oil and let it warm for 30 seconds. Add the ground beef (or turkey), breaking it up with a wooden spoon. Season with 1 teaspoon salt and 1 teaspoon black pepper. Cook, stirring and breaking the meat into small pieces, until browned and no longer pink, about 6–8 minutes.

Drain excess fat (if needed)

If using fatty beef and there is excess fat in the pan, carefully tilt the pan and spoon out or pour off excess fat. Leave any rendered fond in the pan for flavor.

Add seasoning

Stir the taco seasoning ingredients (chili powder, cumin, paprika, garlic powder, onion powder, oregano, red pepper flakes, and brown sugar if using) into the browned meat. Mix thoroughly so the spices coat the meat evenly and cook for 30–45 seconds to bloom the spices.

Simmer with tomato paste and water

Add 2 tablespoons tomato paste (or ketchup) and 1/2 cup water to the seasoned meat. Stir, scraping any browned bits from the bottom of the pan. Bring to a gentle simmer, reduce heat to medium-low, and simmer uncovered for 4–6 minutes until the sauce thickens slightly and coats the meat. Taste and adjust seasoning with a pinch more salt or pepper if needed.

Warm the tortillas

Warm tortillas just before serving. For stovetop: heat a dry skillet over medium-high heat and warm each tortilla 20–30 seconds per side until soft and slightly charred, or brush lightly with 1 teaspoon oil and warm for 15–20 seconds per side for a pliable, slightly crisp edge. For oven: wrap stack of tortillas in foil and heat at 350°F (175°C) for 10 minutes.

Assemble tacos

Lay a warmed tortilla flat, spoon 2–3 tablespoons of the seasoned meat down the center. Top with shredded lettuce, diced tomato, red onion, shredded cheese, a spoonful of salsa or pico de gallo, a dollop of sour cream or crema, chopped cilantro, and pickled jalapeños if using. Squeeze a lime wedge over the top. Repeat for remaining tortillas.

Arrange toppings in bowls or on a platter so guests can customize. Keep shredded cheese and sour cream chilled until serving; place cilantro and lime wedges nearby. If making ahead, store meat warm in a low oven (200°F / 95°C) covered, and reheat tortillas briefly before serving.

Serve tacos immediately while tortillas and meat are hot. Offer extra lime wedges and salsa on the side.
