Spicy Jack Chicken Quesadilla

Prep and spice chicken

Slice the chicken breast into 1/4-inch strips or small bite-size pieces. In a bowl combine smoked paprika, ground cumin, garlic powder, onion powder, cayenne, kosher salt and black pepper. Toss the chicken with 1 tablespoon olive oil and the spice mix until evenly coated. Let sit 10 minutes while you prep vegetables.

Prep vegetables

Dice the red bell pepper and yellow onion into small pieces (about 1/4-inch). Thinly slice the jalapeño, removing seeds if you prefer less heat. Roughly chop the cilantro and cut the lime into wedges.

Cook chicken and veggies

Heat a large nonstick skillet over medium-high heat. Add a drizzle of olive oil if pan is dry. Add the spiced chicken in a single layer and cook 3-4 minutes without moving to get color, then stir and continue cooking 3-4 minutes until internal temperature reaches 165°F (74°C) and pieces are cooked through. Remove chicken to a plate. In the same skillet add the diced onion and bell pepper and sauté 3-4 minutes until softened and lightly browned. Add the sliced jalapeño for the last minute. Return the chicken to the skillet, toss with vegetables, squeeze half the lime over, adjust salt to taste, then remove from heat.

Assemble quesadillas

Wipe the skillet clean and return to medium heat. Butter one side of a flour tortilla lightly (or brush with oil). Place tortilla buttered-side-down in the skillet. Spread about 1/2 cup shredded pepper jack over half the tortilla, top with a quarter of the chicken-vegetable mixture (about 3/4 cup), a sprinkle of cilantro if using, and another 1/4 cup cheese. Fold the tortilla over to enclose filling. Repeat to make 4 quesadillas.

Cook quesadillas

Cook each folded quesadilla 2-3 minutes per side or until golden brown and cheese is melted — press gently with a spatula to encourage contact. If the tortilla browns too quickly before cheese melts, lower heat to medium-low and cover with a lid for 1 minute. Transfer finished quesadillas to a cutting board and let rest 1 minute, then cut into 3 wedges.

Finish and serve

Serve quesadilla wedges with a lime wedge, sour cream or crema, and optional pickled jalapeños. Offer extra cilantro on the side.

Bake or fry fries

For oven: Preheat oven to 425°F (220°C). Spread frozen crinkle fries in a single layer on a baking sheet, toss with 1 tablespoon vegetable oil and optional seasoning, and bake 20-25 minutes flipping once until crisp and golden. For deep fry: Heat oil to 350°F (175°C) and fry in batches 3-4 minutes until golden; drain on paper towels. For air fryer: Cook at 400°F (200°C) for 12-15 minutes shaking halfway. Season with sea salt immediately after cooking.

Keep warm

If making ahead, keep fries on a baking sheet in a warm (200°F / 95°C) oven for up to 10-15 minutes to keep crisp while finishing quesadillas.

Refreshing Beverage (Citrus Iced Tea)

Brew tea

Steep 2 black tea bags in 2 cups hot water for 4-5 minutes depending on desired strength. Remove tea bags and stir in 2 tablespoons simple syrup or honey while warm so it dissolves.

Mix and chill

Add 2 cups cold water and 2 tablespoons fresh lemon juice to the brewed tea. Taste and adjust sweetness or lemon. Chill in refrigerator 10 minutes or pour immediately over ice.

Serve

Fill glasses with ice, pour the iced tea, garnish with lemon slices. Serve alongside quesadillas and fries.

Plate 1 quesadilla (3 wedges) per serving with a generous portion of crinkle fries. Add a dollop of sour cream or crema and optional pickled jalapeños. Offer the citrus iced tea chilled. Squeeze additional lime over the quesadilla if desired.
