Blend Shake

Add 1 cup whole milk, 2 cups vanilla ice cream, 3 tablespoons chocolate syrup, 1 teaspoon unsweetened cocoa powder, and 1 teaspoon granulated sugar to a blender. Add 4 ice cubes. Pulse on low to combine, then blend on high 20–30 seconds until smooth and thick but pourable. Scrape down sides once if needed.

Taste and adjust sweetness or chocolate intensity by adding up to 1 tablespoon more chocolate syrup or 1/2 teaspoon more sugar, then blend 5 seconds more.

Pour the shake into two tall glasses (or one large). Top each with 1 tablespoon whipped cream and sprinkle with chocolate shavings. Serve immediately with a straw.

Prepare Potatoes

Wash and scrub 2 medium russet potatoes. Peel if desired. Cut potatoes into 1/4–1/2-inch sticks for fries. Rinse cut potatoes in cold water until water runs clear to remove excess starch, then pat completely dry with paper towels.

Heat Oil

Pour 1 cup vegetable oil into a heavy skillet (or heat enough in a deep fryer to fully submerge fries). Heat oil over medium-high heat until it reaches 350°F (175°C) or shimmering but not smoking.

Fry Potatoes

Working in a single layer and not overcrowding the pan, add potato sticks and fry 3–5 minutes until pale golden and tender. Remove with a slotted spoon to a paper towel-lined tray. For crisper fries, fry a second time for 1–2 minutes until golden brown. Drain on paper towels.

Season

While still hot, toss the drained fries with 2 tablespoons melted unsalted butter. In a small bowl, combine 3 tablespoons granulated sugar, 1 teaspoon ground cinnamon, and 1 teaspoon fine sea salt. Sprinkle the cinnamon-sugar mixture evenly over the fries and toss gently to coat. Serve warm.

Prepare Yogurt Base

In a small bowl, whisk together 1 cup Greek yogurt, 1 tablespoon honey, and 1/2 teaspoon vanilla extract until smooth and slightly airy. Taste and add more honey if you prefer sweeter parfaits.

Assemble Parfaits

In two small glasses or ramekins, layer ingredients: start with a spoonful of the yogurt mixture, then a layer of mixed berries, then a sprinkle of granola. Repeat to create two layers, finishing with berries on top.

Garnish each parfait with 1 tablespoon toasted sliced almonds. Serve immediately so granola stays crunchy, or chill up to 30 minutes before serving.
