Prepare the bacon
Preheat a skillet over medium heat (or heat oven to 400°F / 200°C if baking). Lay the 3 slices of thick-cut bacon in the skillet without overlapping. Cook, flipping occasionally, until crisp but still pliable, about 6–10 minutes depending on thickness. If using oven, arrange bacon on a foil-lined sheet and bake 12–18 minutes until crisp. Transfer bacon to a paper-towel lined plate to drain.
Slice the tomato
Slice the tomato into two even slices (about 1/4" thick each). Pat lightly with paper towel if very juicy to avoid soggy sandwich.
Assemble sandwich
Spread the mayo mixture (see next section) evenly on both toasted bun halves. On the bottom half, layer baby arugula or leaf lettuce (if using), then tomato slices, then the cooked bacon slices arranged to cover the tomato. Fan the sliced avocado on top of the bacon. Add pickled jalapeño slices if using for heat. Top with the bun crown and press gently to hold.

Make the seasoned mayo by whisking together 1 tablespoon mayonnaise, 1/2 teaspoon lime juice, 1/8 teaspoon garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl until smooth. Taste and adjust salt or lime to preference. This yields a bright, slightly garlicky spread that complements the bacon and avocado.
Avocado Prep
Halve and pit the avocado. Using a spoon, scoop 1/2 of the avocado into a small bowl. Slice it thinly or mash slightly with a fork if preferred for easier spreading/stacking. Lightly season avocado with a small pinch of salt and a few drops of lime juice to prevent browning and to enhance flavor.
Finish & Serve
Cut sandwich in half if desired and serve immediately while the bacon is warm and the bun is crisp. Provide napkins — this sandwich is hearty and slightly messy. Leftovers: store components separately (bacon and avocado will keep best apart) and assemble just before eating to maintain texture.
