1. Season and Grill Turkey
Pat the sliced slow-roasted turkey breast dry. Toss slices with olive oil, smoked paprika, garlic powder, kosher salt, and black pepper until evenly coated. Heat a grill pan or skillet over medium-high heat with 1 tbsp oil or butter. Grill turkey slices 1–2 minutes per side just to warm and get slight char, taking care not to overcook. Remove and keep warm.
Cranberry Sauce
2. Combine cranberries, sugar, water, orange zest, and orange juice in a small saucepan over medium heat. Bring to a simmer, stirring occasionally. Cook 8–10 minutes until most berries pop and sauce thickens. Taste and adjust sweetness. Cool slightly; sauce will thicken further as it cools.
Stuffing (handmade)
3. Melt 3 tbsp butter in a skillet over medium heat. Add chopped onion and celery and sauté 6–8 minutes until softened and translucent. Stir in sage, parsley, and thyme and cook 30 seconds to bloom the herbs. Place bread cubes in a large bowl, pour onion mixture over bread, and add 1 cup warm chicken or turkey stock a little at a time, tossing until the bread is moistened but not soggy. Season with 1 tsp kosher salt and 1/2 tsp black pepper. Let sit 5 minutes to absorb. If you prefer a warm stuffing, transfer to a small baking dish and bake at 350°F (175°C) for 12–15 minutes until heated through and slightly crisp on top.
Mayo & Bread
4. Mix mayonnaise and Dijon mustard (if using) in a small bowl. Butter one side of each bread slice lightly. Heat a skillet or griddle over medium heat. Place bread slices butter-side down and toast 1–2 minutes until golden. Flip and spread the mayo mixture on the toasted side; warm briefly 30 seconds. Remove from heat.
Assembly & Finishing
5. To assemble each sandwich: spread a thin layer of cranberry sauce on one slice of toasted bread (mayo side). Pile 4–5 oz (about 1/4 lb) of the warm grilled turkey slices over the cranberry. Add 1/2 to 3/4 cup of the handmade stuffing on top of the turkey. If using, add a handful of baby arugula and a few drops of hot sauce to taste. Spoon a little extra cranberry sauce on the other bread slice and close the sandwich, mayo side in. Press gently and slice in half.
6. Optional final sear: Lightly butter the outside of the assembled sandwich and return to the skillet over medium heat. Press with a spatula and cook 1–2 minutes per side until golden and warmed through, flipping carefully so stuffing does not spill out.
