Chicken & Marinade

1. Mix marinade

In a medium bowl combine minced chipotle peppers in adobo, olive oil, lime juice, minced garlic, ground cumin, smoked paprika, kosher salt and black pepper. Whisk until smooth.

2. Marinate chicken

Add the thinly sliced chicken thighs to the bowl and toss thoroughly to coat. Cover and refrigerate for at least 20 minutes, up to 2 hours. If short on time, you can proceed after 10–15 minutes.

3. Prepare vegetables

While the chicken marinates, thinly slice the yellow onion, red bell pepper, green bell pepper and jalapeño (if using). Set aside separately so you can add them to the pan in stages.

4. Make chipotle crema

In a small bowl combine mayo, sour cream, lime zest, half of the chopped cilantro and hot sauce (if using). Season with a pinch of salt and pepper and stir until smooth. Chill until assembly.

Cook chicken and vegetables

5. Heat pan

Heat a large skillet or cast-iron pan over medium-high heat. Add vegetable oil and swirl to coat when hot.

6. Sear vegetables

Add sliced onion and bell peppers to the hot pan. Sear, stirring occasionally, until softened and beginning to brown, about 5–7 minutes. Season lightly with salt and pepper. Push vegetables to one side of the pan.

7. Cook chicken

Add the marinated chicken in a single layer to the cleared side of the pan. Let it cook undisturbed for 1–2 minutes to gain color, then stir and continue cooking until no longer pink and just cooked through, about 4–6 minutes total depending on thickness. Break larger pieces into thin strips with a spatula so they mimic a cheesesteak texture.

8. Combine and finish

Stir the vegetables and chicken together. If the pan is dry or there are browned bits, add up to 1/4 cup broth to deglaze, scraping the bottom of the pan. Continue cooking 1–2 minutes so flavors meld. Taste and adjust seasoning with salt and pepper.

Cheese & Assembly

9. Toast rolls

Preheat broiler or a clean skillet. Split the hoagie rolls and spread softened butter on cut sides. Toast cut sides under the broiler or in a skillet until golden, about 1–2 minutes.

10. Melt cheese

Reduce the pan heat to low. Divide the chicken and pepper mixture into four equal portions in the pan. Top each portion with two slices of provolone. Cover the pan with a lid or tent with foil for 1–2 minutes until the cheese melts.

11. Assemble sandwiches

Spoon each cheese-topped portion into a toasted roll. Drizzle or spread chipotle crema inside each roll and sprinkle remaining chopped cilantro on top. Add extra sliced jalapeño or hot sauce if desired.

12. Serve

Serve the Chipotle Chicken Cheesesteaks hot with pickles, fries or a simple salad on the side.
