1. Slice and Marinate
Thinly slice chicken across the grain into roughly 1/8–1/4-inch strips. In a bowl combine olive oil, soy sauce, Worcestershire sauce, minced garlic, onion powder, black pepper, and salt. Add sliced chicken and toss to coat. Let marinate at room temperature for 10–15 minutes or refrigerate up to 2 hours (if refrigerated let sit at room temp 15 minutes before cooking).

3. Sauté Vegetables
Add 1 tablespoon butter or oil to the hot skillet. Add sliced onions and cook, stirring occasionally, until they start to soften and brown, about 4–5 minutes. Add sliced green peppers and mushrooms (if using) and continue to cook until vegetables are tender and slightly caramelized, about 4–6 more minutes. Season vegetables with a pinch of salt and pepper. Transfer vegetables to a plate and set aside.
4. Cook Chicken
Return the skillet to medium-high heat. If needed add 1 teaspoon oil. Add the marinated chicken in an even layer and let sear undisturbed for 1 minute to get color, then stir and spread again so the strips cook quickly. Cook for 3–5 minutes, stirring occasionally, until chicken is cooked through and lightly browned. Taste and adjust seasoning with salt and pepper as needed. Return the cooked vegetables to the pan and toss to combine with the chicken so flavors meld for 30–60 seconds.

5. Assemble with Cheese
Reduce heat to low. Divide the chicken and vegetable mixture into four portions in the skillet. Top each portion with one provolone slice (or fold slices if needed to cover). Cover the skillet with a lid or large sheet pan for 1–2 minutes until the cheese melts.
6. Toast Rolls
While the cheese melts, split the hoagie rolls and spread a light layer of butter on cut sides. Toast them in a separate skillet over medium heat, or under a broiler for 1–2 minutes, until golden. If using mayonnaise, spread about 1/2 tablespoon per roll inside.
