Prepare Special Sauce
1. Mix sauce
In a small bowl whisk together mayonnaise, ketchup, Dijon mustard, sweet pickle relish, white wine vinegar, onion powder, garlic powder, hot sauce (if using) and salt until smooth. Taste and adjust salt or acidity. Chill in refrigerator while preparing burger to let flavors meld (at least 15 minutes).
Form and Cook Patties
2. Form patties
Divide ground chuck into four equal portions (about 4 oz each) and gently form into thin, slightly larger-than-bun patties (about 3/4" thick at center). Do not overwork the meat; make a small shallow dent in the center of each patty with your thumb to help them cook evenly.
3. Season
Season both sides of the patties with kosher salt and freshly ground black pepper immediately before cooking.
4. Cook
Heat a cast-iron skillet or flat-top griddle over medium-high heat until very hot. Add vegetable oil and swirl to coat. Place patties in the skillet leaving space between them. Cook 2 to 3 minutes without moving until edges brown and juices collect on top. Flip, then immediately place one slice of American cheese on each patty. Cook another 1.5 to 2 minutes for medium; adjust time for desired doneness. If using a lid briefly cover for 30 seconds to fully melt cheese.
Toast Buns & Assemble

While patties cook, split brioche buns and spread softened butter evenly on cut sides. Toast buttered sides in a separate skillet or in oven until golden and lightly crisp, about 1 to 2 minutes.
6. Assemble
Spread about 1 to 2 tablespoons of special sauce on the bottom half of each toasted bun. Place a handful (about 1/4 cup) of shredded iceberg lettuce on the sauce, then top with two tomato slices. Add two cheesy patties on top of the tomato (stacked). Place 4 pickle chips on the patties, then optional bacon or caramelized onions if using. Spread a light layer of special sauce on the top bun and close the sandwich.
7. Serve
Press gently to compact the burger slightly, cut in half if desired, and serve immediately while hot.
