Marinate the Steak

In a small bowl, combine ancho chili powder, ground coffee, olive oil, salt, and black pepper. Rub this mixture all over the ribeye steak and marinate for at least 30 minutes (or overnight for more flavor).

Prepare the Home Fries

In a skillet over medium heat, add diced potatoes and enough water to cover them. Cook until tender, about 10-15 minutes. Drain and return to the skillet, adding salt and pepper to taste. Cook until golden brown and crispy, about 5-7 minutes.

Cook the Steak

Heat a grill or skillet over high heat. Cook the marinated ribeye steak for about 4-5 minutes per side for medium-rare, or until desired doneness is reached. Remove from heat and let rest for a few minutes before slicing.

Fry the Eggs

In another skillet, add a little butter or oil and heat over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.

Toast the Sourdough

In the same skillet used for the eggs, add the sourdough slices and toast until golden brown, about 2 minutes per side. Add butter while toasting if desired.

Assemble the Dish

On a plate, serve the sliced ribeye steak alongside the home fries. Top with the sunny-side-up eggs and serve with buttered sourdough toast on the side.
