Heat 5 gallons of water to 165°F (74°C). Add the pale malt, crystal malt, and caramunich malt to the water and maintain a temperature of 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water to collect around 6.5 gallons of wort.

Sparging

Bring the wort to a boil and add Tettnanger hops. Boil for 60 minutes, adding Cascade hops in the last 15 minutes of the boil.

Boiling

Cool the wort quickly using a wort chiller to around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel. Allow it to ferment for 1-2 weeks at 68-72°F (20-22°C).

Fermentation

After fermentation, siphon the beer into sanitized bottles. Add priming sugar for carbonation if desired. Cap the bottles and let them carbonate for another 1-2 weeks.
