Heat 6.5 gallons of water to 165°F. Add pale malt, crystal malt, and carapils malt to the water and hold at 152°F for 60 minutes.

Mashing

After mashing, sparge with enough water to collect approximately 6.5 gallons of wort.

Sparging

Bring the wort to a boil and add 1 oz of Centennial hops. Boil for 60 minutes, adding 0.5 oz of Amarillo hops with 15 minutes left and 0.5 oz of Cascade hops with 5 minutes left.

Boiling

Cool the wort rapidly using a wort chiller or an ice bath until it reaches approximately 70°F.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Ferment at 68-72°F for about 1-2 weeks.

Fermentation

Once fermentation is complete, transfer the beer to a bottling bucket, add priming sugar if desired, and bottle the beer.

Bottling

Let the bottles condition at room temperature for 1-2 weeks, then refrigerate and enjoy your homemade Dogfish Head 60 min IPA.
