OLD FASHIONED

In a large mash tun, heat 6 liters of water to 75°C (167°F). Add the pale malt, wheat malt, and flaked oats. Maintain the temperature for 60 minutes.

Mashing

After mashing, sparge the grains with additional water at 75°C until you collect about 5 liters of wort.

Sparging

Bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes. 15 minutes before the end of the boil, add the coriander seeds and orange peel.

Boiling

After the boil, cool the wort rapidly using a wort chiller until it reaches about 20°C (68°F).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal with an airlock and ferment at a temperature of 18-22°C (64-72°F) for about 1-2 weeks.

Fermentation

Once fermentation is complete, bottle the beer with priming sugar and allow to carbonate for another 1-2 weeks.
