Prepare the Chicken

In a small bowl, mix together the ancho chili powder, garlic powder, onion powder, paprika, salt, and black pepper. Rub the spice mixture all over the chicken breasts.

Cook the Chicken

Heat a skillet over medium-high heat and add a little oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and blackened. Remove from heat and let rest.

Cook the Bacon

In the same skillet, add the bacon slices and cook until crispy. Remove and drain on paper towels.

Toast the Bread

Lightly toast the sourdough slices in the skillet or a toaster until golden brown.

Assemble the Sandwich

On one slice of toasted sourdough, layer the blackened chicken, cheddar cheese, pickles, romaine lettuce, sliced onion, bacon, tomato, and guacamole. Spread chipotle mayo on the top slice of sourdough and place it on top.

Serve the sandwich with a side of fries and enjoy!
