In a large pitcher (at least 2.5–3 L capacity), combine the dry red wine, brandy, orange liqueur, granulated sugar, and fresh orange juice.

Stir vigorously for about 30 seconds until the sugar dissolves. Taste and adjust sweetness by adding 1 tbs more sugar if desired; stir to dissolve.

Fruit

Prepare the fruit: thinly slice the orange and lemon, core and dice the green apple, halve the grapes, and quarter or slice any strawberries if using.

Add all prepared fruit to the pitcher with the wine mixture. Gently press a few slices against the side of the pitcher with the back of a spoon to release some juices, but avoid crushing the fruit.

Stir the fruit into the sangria so it is evenly distributed.

Infuse & Chill

Cover the pitcher and refrigerate for at least 4 hours and up to 24 hours. For best flavor, refrigerate 6–12 hours to allow fruit flavors to meld and alcohol to infuse the fruit.

Finishing & Serve

Just before serving, add the chilled club soda or sparkling water to the pitcher to provide brightness and bubbles; stir gently to combine.

Fill glasses with ice (about 1/2 cup per serving). Using a slotted spoon or pour carefully so fruit is distributed, serve the sangria into glasses, making sure each glass gets a mix of fruit.

Garnish each glass with a sprig of fresh mint if desired and serve immediately. Leftover sangria (without ice) will keep covered in the refrigerator for up to 48 hours; add fresh club soda when re-serving to restore bubbles.
