Prepare

Chill a coupe or martini glass by filling it with ice water while you mix the cocktail.

Dry shake (if using egg white)

If using the egg white for a silky foam, add egg white, gin (2 oz), fresh lemon juice (0.75 oz), simple syrup (0.5 oz), and creme de violette (0.5 oz) to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and build foam.

Wet shake

Add a generous handful of ice to the shaker (about 1 cup). Seal and shake hard for 10–15 seconds until the shaker is very cold and exterior is frosty. If you skipped the dry shake (no egg white), combine all liquid ingredients with ice and shake for 12–15 seconds.

Strain and serve

Dump the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe using a Hawthorne strainer and fine mesh strainer to remove ice chips and any coagulated egg white. The drink should be a pale lavender/blue with a silky foam (if egg white used).

Garnish

Express a lemon peel over the surface to release oils, wipe the rim with the peel and drop it in, or place a brandied cherry on a pick and rest it on the rim. Serve immediately.
