Bread Pudding Bites

    Prepare the Bread

    Preheat your oven to 350°F (175°C). Cut the stale bread into bite-sized pieces and place them in a large mixing bowl.

    Mix Wet Ingredients

    In a separate bowl, whisk together the milk, heavy cream, sugar, eggs, vanilla extract, cinnamon, and a pinch of salt until well combined.

    Combine

    Pour the wet ingredient mixture over the bread pieces and gently stir to combine. Let it sit for about 15 minutes to allow the bread to soak up the liquid.

    Prepare Baking Dish

    Grease a muffin tin with butter. Spoon the bread mixture into each muffin cup, filling them about 3/4 full.

    Bake

    Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick comes out clean when inserted in the center.

    Cool

    Remove from the oven and let the bites cool in the tin for about 10 minutes before transferring to a wire rack.

Anglaise Sauce

    Heat the Cream and Milk

    In a saucepan, combine the milk and heavy cream. Heat over medium heat until warm but not boiling.

    Whisk Egg Yolks and Sugar

    In a mixing bowl, whisk the egg yolks and sugar together until pale and thick.

    Temper the Egg Mixture

    Slowly pour the warm milk mixture into the egg mixture, whisking constantly to prevent curdling.

    Cook the Sauce

    Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Let the sauce cool slightly before serving.

Salted Caramel

    Make the Caramel

    In a saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar has dissolved.

    Cook Until Golden

    Allow the mixture to cook without stirring until it turns a deep amber color.

    Add Cream and Butter

    Remove from heat and carefully add the heavy cream and butter, stirring until smooth.

    Finish with Salt

    Stir in the sea salt. Let cool to room temperature before drizzling over the bread pudding bites.
