    Using a sharp knife or mandoline, cut the potatoes into thin slices (about 1/8 inch thick). Try to make the slices uniform for even cooking.

    Soak the Potato Slices

    Place the sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This will help achieve a crispier chip.

    In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
