Halibut & Shrimp Preparation

    Prepare the Seafood

    Cut the halibut fillet into small, bite-sized cubes and place them in a mixing bowl. Add the raw shrimp and sprinkle with sea salt. Squeeze the juice of 3 key limes over the seafood and mix gently. Let it marinate in the refrigerator for at least 30 minutes until the shrimp is opaque and the halibut is slightly cured.

    Make the Salsa

    In a separate bowl, combine the diced apricots, diced peaches, finely chopped red onion, chopped cilantro, and chopped mint. If you like spice, add the finely chopped jalapeño. Drizzle with olive oil and honey, then mix well to combine all the ingredients. Set aside.

    Combine and Serve

    After the seafood has marinated, gently fold the prepared salsa into the ceviche mixture. Squeeze the remaining key lime juice over the top for added zest. Serve immediately in chilled bowls with tortilla chips or on a bed of lettuce for a refreshing appetizer.
