    Prepare the Salsa Criolla

    In a medium bowl, combine the diced red onion, diced tomato, and diced green bell pepper. Add chopped fresh cilantro, lime juice, olive oil, salt, and black pepper. Mix well and set aside to let the flavors meld.

    Prepare the Pork Chops

    Pat the Duroc pork chops dry with paper towels. Season both sides with salt and pepper.

    Breading the Pork Chops

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each pork chop in flour, shaking off the excess, then dip in the egg, and finally coat with breadcrumbs, pressing gently to adhere.

    In a large skillet, heat enough oil over medium-high heat to cover the bottom. Once hot, add the breaded pork chops and cook for about 4-5 minutes on each side until golden brown and cooked through. Transfer to a paper towel-lined plate to drain any excess oil.
