In a large skillet over medium heat, add the thick-cut bacon slices in a single layer. Cook until crispy and browned, about 8-10 minutes, flipping halfway through. Once done, remove the bacon from the skillet and set aside on a plate lined with paper towels to absorb excess grease.

While the bacon is cooking, place black peppercorns in a mortar and pestle or a ziplock bag and crush them lightly with a rolling pin. You want them to be coarsely cracked to release their flavor but not ground into a fine powder.

In the same skillet with the bacon drippings, add olive oil and minced garlic cloves (you can mince them or leave them whole for a more subtle flavor). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Pour in the heavy cream and beef stock into the skillet, stirring to combine with the garlic and drippings. Bring the mixture to a simmer.

Incorporate Pepper and Simmer
Add the cracked black peppercorns and salt to the skillet. Stir well and allow the sauce to simmer gently for about 5-7 minutes until it thickens slightly.
