Activate yeast (if desired)

Place warm water (about 100–110°F / 38–43°C) in a small bowl and stir in the sugar and instant yeast. Let sit 5–7 minutes until foamy. (Note: with instant yeast you can also add it directly to flour; this step ensures activity.)

In a large mixing bowl (or the bowl of a stand mixer fitted with a dough hook), combine the flour and salt and whisk to distribute the salt.

Add the olive oil to the flour. Pour the foamy yeast mixture (or the measured warm water and the yeast if you skipped activation) into the flour mixture.

Mix until a shaggy dough forms. If using a stand mixer, knead on medium-low for 6–8 minutes until the dough is smooth, slightly tacky, and elastic. If kneading by hand, turn the dough out onto a lightly floured surface and knead 8–10 minutes, adding small pinches of flour only if the dough is overly sticky.

Form the dough into a ball and place it in a lightly oiled bowl, turning once to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm draft-free spot until doubled in size, about 1 to 1¼ hours.

Shaping and final rise

Gently punch down the risen dough and transfer to a lightly floured work surface. Divide into 8 equal pieces (about 70–80 g each).

Roll each piece into a smooth ball, then cover with a towel and let rest 10 minutes to relax the gluten—this makes rolling easier.

Using a rolling pin, roll each ball into a circle about 6–7 inches (15–18 cm) in diameter and roughly 1/8 to 1/4 inch (3–6 mm) thick. Try to keep thickness even to ensure consistent puffing.

Place the rolled pitas in a single layer on a lightly floured surface or parchment, cover with a clean towel, and let them rest for 20–30 minutes until slightly puffy. Meanwhile preheat your oven (see next section).

Baking

Preheat your oven to 475°F (245°C). If you have a baking stone or steel, place it on the middle rack while the oven preheats. Alternatively, use an inverted baking sheet; place it in the oven to heat as well.

If using, sprinkle semolina or cornmeal on a peel or another inverted sheet to prevent sticking. Place a few rolled pitas (2–3) onto the hot stone or sheet quickly—do not overcrowd.

Bake for 3–5 minutes until the pitas puff fully and are lightly golden with a few brown spots. Watch closely — they can overbake quickly. For a slightly chewier exterior, you can brush the tops with a little olive oil immediately after removing from the oven.

Remove baked pitas to a clean kitchen towel and cover to keep them soft while you finish the remaining dough. Repeat baking with remaining rounds.

Serving and storage

To open pockets: gently slice through the perimeter with a serrated knife and pull apart layers, or carefully insert fingers to create a pocket. Serve warm with fillings (falafel, shawarma, vegetables, dips) or use as flatbreads.

To store: cool completely, then keep in an airtight bag at room temperature for up to 2 days or in the refrigerator for up to 4 days. For longer storage, freeze stacked with parchment between them for up to 2 months; reheat briefly in a hot oven or skillet.
