Method
Espresso / Coffee Base
Brew espresso
Pull two 30-ml shots of espresso (about 60 ml total). If you don't have an espresso machine, brew 60 ml of very strong coffee (use about twice the normal coffee-to-water ratio). Keep the espresso hot.
Chocolate & Sweetener
Make chocolate syrup
In a small heatproof cup or bowl, combine the cocoa powder and sugar. Add 1–2 tablespoons of the hot espresso (or hot water if using brewed coffee) and stir to make a smooth paste without lumps. Add the chopped semisweet chocolate (or chocolate syrup) and stir until melted and smooth. If needed, microwave in 10–15 second bursts, stirring between, until fully combined and glossy.
Combine with espresso
Pour the remaining hot espresso into the chocolate mixture and stir vigorously until fully incorporated and slightly frothy. Taste and adjust sweetness if desired.
Milk & Foam
Heat and froth milk
Pour 250 ml milk into a small saucepan and warm over medium-low heat until steaming but not boiling (about 65–70°C). Stir in the vanilla extract. Froth the milk using a milk frother, steam wand, or by vigorously whisking or shaking in a sealed jar until you have some microfoam on top.
Garnish (optional)
Top with 1–2 tablespoons whipped cream. Sprinkle grated chocolate or a dusting of cocoa powder over the whipped cream. Serve immediately.
