Cook chorizo
Heat a large nonstick skillet over medium heat. Add 1 tablespoon vegetable oil. Add the chorizo (removed from casings) and break up with a spatula. Cook, stirring occasionally, until the meat is well browned and mostly crisp, about 6–8 minutes. Use a slotted spoon to transfer cooked chorizo to a bowl, leaving rendered fat in the pan.
Sauté vegetables
If the pan is dry, add the remaining 1 tablespoon oil. Add the diced onion and red bell pepper to the hot pan and sauté over medium heat until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant. Stir in the cooked chorizo, ground cumin, black pepper, and chopped cilantro. Taste and adjust seasoning. Remove from heat and keep warm.
Assemble and Cook Quesadillas
Set up an assembly station with tortillas, shredded cheeses (mix Oaxaca/Monterey Jack and cheddar in a bowl), and the warm chorizo filling.
Assemble
Place one tortilla flat on a work surface. Sprinkle about 1/3 cup shredded cheese evenly over half the tortilla. Add about 2 to 3 tablespoons of the chorizo-vegetable mixture (enough for an even layer but not overloaded). Top the filling with another 1/4 cup cheese (this helps the quesadilla seal). Fold the tortilla in half to enclose the filling. Repeat to make 8 quesadillas.
Pan-fry
Wipe the skillet clean and return to medium heat. Add 1/2 tablespoon butter and let it melt and foam. Add 2 assembled quesadillas (do not overcrowd). Cook until the bottom is golden brown and crisp, about 2–3 minutes. Carefully flip and cook the other side until golden and the cheese is melted, another 2–3 minutes. Add a little more butter for the next batch if needed. Total cooking time per batch should reach fully melted cheese and crisp exterior.
Oven option (keeps warm)
If cooking in batches, preheat the oven to 200°F (95°C). Place cooked quesadillas on a baking sheet in the oven to keep warm while finishing remaining quesadillas.
Serve
Transfer cooked quesadillas to a cutting board. Let rest 1 minute to set, then cut each into 3–4 wedges using a pizza cutter or sharp knife. Serve hot with lime wedges, sour cream or crema, and pickled or fresh jalapeños on the side.
Suggested accompaniments: salsa roja, guacamole, or pico de gallo.
