Method

Chicken Salad

Prep Chicken

If using leftover or rotisserie chicken, remove skin and bones and shred or chop into bite-size pieces until you have about 3 cups. If starting raw, poach chicken breasts in simmering salted water about 12–15 minutes until 165°F/74°C, then cool and chop.

Mix Salad Base

In a large bowl combine 0.5 cup mayonnaise, 0.25 cup Greek yogurt, 1 tablespoon honey, 1 teaspoon Dijon mustard, and 1 tablespoon fresh lemon juice. Whisk until smooth and creamy.

Add Chicken and Vegetables

Add the 3 cups chopped chicken, 1 cup finely diced celery, 0.25 cup very finely minced red/sweet onion, and 2 tablespoons chopped fresh dill to the bowl. Toss gently to combine so the dressing evenly coats the chicken.

Season and Optional Add-ins

Season with 1 teaspoon salt and 0.5 teaspoon freshly ground black pepper. If using, fold in 0.5 cup toasted walnuts or sliced almonds for crunch. Taste and adjust balance: a little more honey if you want sweeter, a pinch more lemon for brightness, or more dill to emphasize herbiness.

Cover and chill the chicken salad in the refrigerator for at least 20–30 minutes to let the flavors meld. Remove about 10 minutes before serving so it isn’t ice-cold.

Smears and Toppings

Onion Smear (quick pickled onion)

Combine 0.25 cup very finely minced red onion, 1 tablespoon white wine vinegar, 1 teaspoon olive oil and 0.25 teaspoon salt in a small bowl. Let sit 10–15 minutes to soften and mellow the onion. Drain any excess liquid before using. Spread a thin layer (about 1 teaspoon) on each bread slice where indicated.

Dill Cream Smear

In a small bowl beat together 3 tablespoons softened cream cheese and 2 tablespoons Greek yogurt until smooth. Stir in 1 tablespoon chopped fresh dill, 0.5 teaspoon lemon zest and 1/8 teaspoon salt. If too thick, loosen with 1/2 teaspoon water or lemon juice. Spread about 2 teaspoons on each slice of pumpernickel where desired.

Sweet Honey-Mustard Smear

Whisk together 1 tablespoon honey, 1 teaspoon Dijon mustard, 1 teaspoon olive oil and 0.5 teaspoon lemon juice until emulsified. Taste and adjust sweetness/acid. Use about 1 teaspoon per slice for a touch of sweet contrast.

Toast Bread

Heat a skillet over medium heat and add 2 teaspoons butter or neutral oil. Toast pumpernickel slices 1–2 minutes per side until warm and slightly crisp but not burnt. Alternatively, toast in a toaster oven on medium.

Assemble Open-Faced

On each warmed pumpernickel slice, spread your chosen smears: a thin layer of onion smear in one area, a small smear of dill cream, and a small smear of sweet honey-mustard on another area or layered lightly for contrast. This creates bites with onion-forward, dill-forward, and sweet-forward notes as you eat.

Top with Chicken Salad

Divide the chilled chicken salad into 8 equal portions (about 6 tablespoons each) and mound one portion onto each prepared pumpernickel slice. Lightly press so it adheres to the smears.

Finish and Garnish

Garnish each open-faced sandwich with a small sprig of fresh dill and a few microgreens or baby lettuce if using. Optionally sprinkle a few reserved toasted nuts over the top for crunch.

Serving and Storage

Serve immediately while bread is slightly warm and smears are fresh. These are best consumed within 2 hours for crisp bread. Store any leftover chicken salad in an airtight container in the refrigerator for up to 3 days. Do not pre-spread smears on bread if storing assembled sandwiches; instead keep components separate and assemble just before serving.
