Prep the chicken
If your chicken is not already cooked, poach, roast, or grill about 1 pound of boneless skinless chicken breasts or thighs, then shred or dice until you have roughly 2 cups. (Store-bought rotisserie chicken works well and speeds this step.)
Cook vegetables and spices
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chopped onion and sauté 3–4 minutes until softened. Add the diced red bell pepper and chopped jalapeño and cook another 2–3 minutes until peppers are tender-crisp. Stir in the minced garlic and cook 30 seconds until fragrant.
Season and combine
Add shredded chicken to the skillet. Sprinkle in cumin, chili powder, smoked paprika, salt, and black pepper. Toss to combine and cook 2–3 minutes until the chicken is heated through and the spices are aromatic. Remove from heat, stir in chopped cilantro and lime juice. Taste and adjust seasoning if needed. Transfer filling to a bowl and keep warm.
Assemble & cook quesadillas
Heat pan and prepare tortillas
Wipe the skillet clean and return to medium-low heat. Add about 1/2 tablespoon butter or 1/2 teaspoon oil to the pan per quesadilla (you will re-add between tortillas). Let it melt and coat the surface.
Assemble each quesadilla
Place one large tortilla on a flat surface. Sprinkle a thin, even layer (about 1/3 cup) of shredded cheese over half of the tortilla. Spoon about 1/3 cup of the chicken filling evenly over the cheese. Top the filling with another 1/6–1/4 cup of cheese (this helps the quesadilla stick). Fold the empty half of the tortilla over to create a half-moon.
Cook until golden and melty
Carefully transfer the assembled quesadilla to the preheated skillet. Cook 2–3 minutes per side over medium-low heat (cover the pan for the first minute if your stove runs cooler) until the tortilla is golden brown and the cheese has melted. Use a spatula to press gently and flip once; add another 1/2 tablespoon butter or small drizzle of oil to the pan before flipping if needed for browning. Transfer cooked quesadilla to a cutting board and let rest 1 minute before slicing. Repeat assembly and cooking with remaining tortillas and filling (you should get about 6 quesadillas total).
Slice and serve
Cut each quesadilla into 3–4 wedges with a sharp knife or pizza cutter. Arrange on a platter and garnish with extra chopped cilantro and lime wedges. Serve immediately with sour cream, salsa, and guacamole on the side.
Notes & tips
Make-ahead: Prepare the seasoned chicken filling up to 2 days in advance and refrigerate. Reheat gently in a skillet before assembling. For crispy quesadillas, cook on medium-low so cheese melts before the tortilla over-browns. Swap in corn tortillas for a smaller, gluten-free version (use 2 tortillas per quesadilla).
