Prepare serving pieces

Warm 4 crostini or blini so they are slightly warm but not hot. This brings out flavor and texture—toast in a 300°F (150°C) oven for 3–5 minutes or warm briefly in a dry skillet until just heated through. Transfer to a clean plate.

Temper butter

Using a small spoon, shave or very finely dice the 1/4 tsp very cold unsalted butter so it softens slightly. The butter should remain cold but pliable; this will lightly coat the bread/blini and help the caviar adhere without melting into it.

Assemble base

Lightly spread a thin film (about 1/16–1/8 tsp worth) of the cold butter on each warmed crostini/blini. The layer should be barely noticeable — enough to give richness and a place for the caviar to sit.

Portion caviar

Divide the 1/2 oz Hackleback caviar into four equal portions (approximately 0.125 oz / ~3.5 g each). Using a small spoon (mother-of-pearl or plastic preferred to avoid metallic taste), gently place each portion on top of the buttered crostini/blini, mounding slightly in the center.

Finish & garnish

Sprinkle a light pinch of cracked black pepper across the four topped pieces (a very small amount). Sprinkle the 1/2 tbsp finely snipped chives evenly over the four portions (about 1/8 tbsp per piece). Finish each with a delicate dusting of lemon zest (about 1/64–1/32 tsp per piece) to add brightness.

Serve

Arrange the four caviar-topped crostini/blini on a chilled or room-temperature platter and serve immediately. Provide small mother-of-pearl spoons or non-reactive utensils for guests to serve themselves to avoid metallic aftertaste.
