Spit-Roasted Leg of Lamb

    Prepare the lamb

    Remove lamb from refrigerator 1 hour before cooking to come to near room temperature. Pat dry with paper towels. Using a small sharp knife, score the fat in a diamond pattern about 1/4 inch deep.

    Make herb marinade

    In a bowl, combine minced garlic, chopped rosemary, chopped thyme, lemon zest, kosher salt, black pepper, and olive oil. Whisk until emulsified.

    Marinate

    Rub the herb marinade all over the lamb, working it into the scored fat and any exposed meat. If time allows, wrap and refrigerate for 2–6 hours or overnight for deeper flavor. Bring back to room temperature 1 hour before roasting.

    Skewer and secure

    If using a spit, center the leg of lamb on the spit rod, secure with forks or clamps, and tie with butcher's twine if needed to ensure even rotation. If you don't have a spit, use a rack in a roasting pan and follow oven-roasting times.

    Preheat and roast

    Preheat the spit-roaster or oven to 375°F (190°C). If using a spit, start rotation and set heat so the exterior browns evenly. Roast until an instant-read thermometer inserted into the thickest part (not touching bone) reads 125°F (52°C) for medium-rare (approximately 1.5–2 hours for a 5 lb leg), or 135°F (57°C) for medium. Baste every 20–30 minutes with melted butter mixed with a splash of white wine for gloss and flavor.

    Rest

    Remove lamb from spit or oven when 5–7°F below target temp; tent loosely with foil and rest for 20–25 minutes. Carryover cooking will bring it to the final temperature and juices will redistribute.

    Carve

    Transfer to a cutting board, discard twine and forks, and carve slices across the grain to desired thickness. Reserve resting juices for the jus if any.

Roasted Garlic Jus

    Roast the garlic

    Preheat oven to 400°F (200°C). Halve the garlic heads horizontally, drizzle cut sides with olive oil, sprinkle a pinch of salt, wrap loosely in foil and roast for 30–35 minutes until cloves are very soft and golden. Squeeze roasted garlic into a small bowl and mash to a paste.

    Sweat shallot

    While lamb rests (or during last 30 minutes of roasting), melt 1 tbsp butter in a sauté pan over medium heat. Add minced shallot and cook gently until translucent, about 3–4 minutes—do not brown.

    Deglaze and reduce

    Add the red wine to the shallots, bring to a simmer and reduce by about half to concentrate flavor (3–5 minutes). If you reserved lamb pan juices, add them now along with the wine.

    Add stock and herbs

    Stir in the beef or lamb stock, rosemary and thyme sprigs, and whole peppercorns. Simmer gently for 12–15 minutes to marry flavors and reduce slightly.

    Incorporate roasted garlic

    Whisk the roasted garlic paste into the sauce and simmer 2–3 more minutes. Taste and season with salt and black pepper.

    Finish the jus

    Strain the sauce through a fine-mesh sieve into a clean saucepan, pressing on solids to extract flavor. Return to low heat and whisk in cold cubed butter one piece at a time to create a glossy emulsion. Keep warm and hold until lamb is carved.

Herb Risotto

    Prepare stock

    Keep 5 cups of chicken or vegetable stock warm in a saucepan over low heat; this ensures even cooking of the rice.

    Sweat aromatics

    In a heavy-bottomed sauté pan or wide saucepan, heat olive oil and 1 tbsp butter over medium heat. Add the minced shallot and cook until soft and translucent, 2–3 minutes.

    Toast rice

    Add the arborio rice and stir to coat with fat. Toast the rice for 1–2 minutes until edges look translucent but centers remain opaque.

    Deglaze

    Pour in the 1/2 cup dry white wine and stir until the wine is mostly absorbed.

    Cook risotto

    Begin adding warm stock, one ladleful (about 1/2 cup) at a time, stirring frequently. Wait until each addition is mostly absorbed before adding the next. Continue this process for 18–22 minutes, or until rice is creamy and al dente. You may not need all the stock; stop when texture is correct.

    Finish with herbs and cheese

    Remove from heat and stir in remaining 2 tbsp butter, grated parmesan, chopped parsley, chives, and basil. Season with salt and black pepper to taste. Cover and let rest 2 minutes before serving to meld flavors.
