    Make the roux

    In a large heavy-bottomed Dutch oven or wide pot, heat vegetable oil over medium heat until shimmering. Whisk in the flour to combine fully. Cook, stirring constantly with a heatproof spatula or wooden spoon, for 20–30 minutes until the roux is a deep chocolate-brown color (watch closely so it doesn't burn). Reduce heat if browning too quickly; patience is key for flavor.

    Add the Holy Trinity and garlic

    Once the roux is a deep brown, add the diced onion, bell pepper, and celery. Stir to coat vegetables with the roux and cook over medium-low heat for 8–10 minutes until softened and translucent. Add the minced garlic and cook 1–2 minutes until fragrant, stirring constantly to prevent burning.

    Brown the sausage and sear the chicken

    Push the vegetables to the side, add the sliced andouille to the pot and cook 3–4 minutes until it releases some fat and browns. Remove sausage with a slotted spoon and set aside. Add the chicken pieces to the pot and sear 3–4 minutes until lightly browned on the outside (they do not need to be cooked through). Return the sausage to the pot.

    Stir in the Worcestershire sauce and scrape up any browned bits from the bottom of the pot with a wooden spoon. Slowly add the chicken stock while stirring to incorporate any roux that may have stuck; this will thicken the stock immediately. Add bay leaves.

    Bring the mixture to a gentle simmer, then reduce heat to maintain a low simmer. Add Cajun or Creole seasoning, smoked paprika, dried thyme, hot sauce, salt, and black pepper. Simmer, partially covered, for 30–40 minutes to allow flavors to meld and the chicken to cook through. Taste and adjust seasoning as needed.

Finishing with Seafood and Serving

    Add shrimp

    With 5–7 minutes remaining in the simmer, add the peeled and deveined shrimp. Stir and simmer until shrimp are pink and opaque, about 4–6 minutes depending on size. Do not overcook.

    Check thickness — if the gumbo is too thin, simmer uncovered a few minutes to reduce; if too thick, add up to 1/2 cup extra stock or water. Remove and discard bay leaves. Adjust salt, pepper, or hot sauce to taste.
