    Prepare cornbread

    If you don't have day-old cornbread, bake or purchase cornbread and let cool. Crumble into 8 cups of roughly 1/2- to 3/4-inch pieces and set in a large mixing bowl.

    Warm 1.5 cups of chicken or vegetable stock and keep hot. This will be added gradually to hydrate the cornbread.

    In a small pan over medium heat, melt 4 tablespoons butter with 1 tablespoon olive oil until foaming. Pour melted fat over the crumbled cornbread. Add the lightly beaten egg, 1 teaspoon coarse salt, and 1/2 teaspoon freshly ground black pepper. Toss gently to combine. Add warmed stock 1/4 cup at a time, tossing, until the cornbread is moist but not soggy — you should reach a cohesive but slightly loose mixture (about 1 to 1.5 cups stock total depending on crumb dryness). Set aside to absorb while you prepare the oyster mixture (5–10 minutes).

Oyster Mixture & Aromatics

    Reserve the oyster liquor by straining through a fine sieve or coffee filter into a small bowl; set aside any sediment. Pat oysters lightly with paper towel to remove excess moisture.

    In a large skillet over medium heat, melt 2 tablespoons butter. Add the finely diced onion and celery and cook until softened and translucent, about 6–8 minutes, stirring occasionally so they don't brown.

    Add the minced garlic and thyme and cook 30–45 seconds until fragrant.

    If using, add 1/4 cup dry white wine to deglaze the pan. Let it reduce by half (about 1–2 minutes).

    Add the drained oysters and 2–3 tablespoons of the reserved oyster liquor to the pan. Cook gently for 1–2 minutes until the oysters just begin to plump and edges curl slightly — do not overcook. Remove from heat and stir in 1 tablespoon lemon juice, 1/2 teaspoon hot sauce (if using), and the chopped parsley. Taste and season lightly with salt and pepper (remember oysters add brininess).

    Fold the warm oyster mixture into the prepared cornbread mixture, combining thoroughly but gently so oysters remain intact. If mixture seems dry, add additional reserved oyster liquor or stock 1 tablespoon at a time until moistened to the same cohesive consistency as before.

Finish & Bake

    Preheat the oven to 350°F (175°C). Butter a 9x9-inch baking dish or a 2-quart casserole dish.

    Transfer the stuffing mixture to the prepared dish and press gently into an even layer. If you like a crunchier top, combine 1/2 cup panko with 1 tablespoon melted butter and sprinkle over the top.

    Cover the dish with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes until the top is set and edges are lightly browned. If you prefer a drier stuffing, bake uncovered for the full 30–35 minutes.

    Remove from oven and let rest 5 minutes. Taste and adjust seasoning with additional salt, pepper, or a squeeze of lemon juice. Serve warm.
