Make the dark roux
In a large heavy-bottomed Dutch oven or deep pot set over medium-low heat, combine 3/4 cup vegetable oil and 3/4 cup all-purpose flour. Stir constantly with a wooden spoon or heatproof spatula to prevent burning. The mixture will darken slowly; after about 20–30 minutes it should reach a peanut-butter to milk-chocolate brown (for Creole gumbo aim for a medium-dark roux). If it gets too dark too quickly, reduce the heat. Once the desired color is reached, immediately remove from direct heat and stir in 2 tablespoons unsalted butter and 2 tablespoons tomato paste until smooth. This helps stop cooking and adds richness.

Return the pot to medium heat and slowly whisk in 8 cups chicken stock, a small ladle at a time, scraping up any fond from the bottom. Bring to a gentle simmer.

While you build the roux or after the stock is added, heat a separate skillet over medium-high heat. Add the sliced andouille sausage (12 oz) and cook until nicely browned, about 5 minutes. Remove with a slotted spoon and set aside, leaving rendered fat in the pan. If the pan is dry, add 1 tablespoon vegetable oil.

In the same skillet (or in the pot after browning sausage), add the diced onion (1), green bell pepper (1), and diced celery (3). Sauté over medium heat until softened and beginning to brown, about 6–8 minutes. Add minced garlic (4 cloves) and sauté 30–60 seconds until fragrant. If using fresh okra, add sliced okra (2 cups) and cook 3–4 minutes until slightly softened. Transfer this vegetable mixture to the pot with the simmering roux-stock base.

Add 2 bay leaves and the browned sausage to the pot. Simmer the combined gumbo base uncovered on low to medium-low for 25–30 minutes to meld flavors, stirring occasionally to prevent sticking.

Season the chicken pieces (1 lb) lightly with 1 teaspoon Creole seasoning and 1/2 teaspoon black pepper. In a skillet over medium-high heat, add 1 tablespoon oil or reserved sausage fat and brown the chicken in batches until lightly caramelized (about 3 minutes per side). They do not need to be fully cooked through. Transfer the browned chicken to the simmering gumbo and continue to simmer for 12–15 minutes until chicken is cooked through and flavors have combined.

Add raw prawns (1 lb) to the pot during the last 4–6 minutes of simmering — prawns cook quickly and will turn pink and curl when done. Gently fold in the crab meat (8 oz) in the final 2–3 minutes just to heat through; avoid over-stirring to keep lumps intact.
Spices & Final Seasoning

Stir in 2 teaspoons Creole seasoning (adjust to taste), 1 teaspoon dried thyme, 1 teaspoon dried oregano, 1 teaspoon Worcestershire sauce, and 1 teaspoon hot sauce. Taste and adjust salt (about 1 teaspoon) and pepper. If the gumbo needs thickening, simmer uncovered 5–10 minutes more; for thinning, add up to 1 cup extra stock or water. Remove and discard bay leaves.

If using file powder, sprinkle up to 1 teaspoon into the gumbo off heat and stir — file thickens and adds a distinctive flavor. Let sit 3–5 minutes slightly off the heat so the file can bloom.
Rice & Serving

While gumbo is simmering, prepare rice. Rinse 2 cups long-grain white rice under cold water until water runs clear. Combine rice with 4 cups water and a pinch of salt in a saucepan, bring to a boil, then reduce to low, cover and simmer 15–18 minutes until water is absorbed. Remove from heat and let rest covered 5 minutes, then fluff with a fork.

To serve: spoon a bed of rice into bowls, ladle hot gumbo over rice making sure to include chicken, sausage, prawns, and some crab. Garnish with sliced green onions (4) and chopped fresh parsley (1/2 cup). Offer lemon wedges and additional hot sauce at the table.
