Select a tall highball or pint glass. Run the lime wedge around the rim of the glass to moisten it.

Pour the Tajin seasoning onto a small plate. Dip the moistened rim into the Tajin and rotate until the rim is evenly coated. Set the glass aside.

Add 1 cup of ice to the prepared glass (use large ice cubes if available).

Cocktail

In a cocktail shaker or mixing glass filled halfway with ice, pour 2 oz Tito's Vodka and 5 oz Zing Zang Bloody Mary Mix.

Add 0.5 oz fresh lime juice, 2 dashes Worcestershire sauce, 0.5 tsp house-made One Pepper Hot Sauce (omit or reduce if you prefer less heat), 1 tsp freshly ground black pepper, and 1/4 tsp celery salt.

Cap the shaker and roll or gently shake for 8–10 seconds to chill and mildly dilute the drink. (If you prefer less foam and cloudiness, stir with a bar spoon for 10–15 seconds instead.)

Strain or pour the mixed Bloody Mary into the prepared, ice-filled glass, leaving space at the top for garnishes.

Garnish (assemble)

Skewer three olives onto a cocktail pick and rest it across the top of the glass or drop the olives in. Add the celery stalk to the glass as a stirrer and visual garnish.

Add a lemon or lime wheel on the rim. Optionally tuck a pickled pepperoncini or pickled green bean beside the celery. For an indulgent variation, add one crisp bacon strip to the rim or inside the glass.

Taste briefly and adjust heat or seasoning: add more One Pepper Hot Sauce (1/4 tsp increments) for heat, or a pinch more celery salt or Worcestershire to taste.

Serve immediately with a small straw and an additional lime wedge on the side.
