Parmesan Tuile Crisps

Preheat and prepare baking sheet

Preheat oven to 375°F (190°C). Line a small baking sheet with parchment paper or a silicone baking mat.

Form and bake tuiles

Place small mounds (about 1 tablespoon each) of the finely grated Parmesan onto the prepared sheet, spaced 2 inches apart. If desired, lightly sprinkle each mound with a tiny pinch of black pepper. Gently spread each mound into a 2- to 2.5-inch thin circle using the back of a spoon.

Bake until golden

Bake in the preheated oven for 5–7 minutes, until the edges just begin to turn golden brown. Watch carefully to prevent burning.

Cool to crisp

Remove from oven and let the tuiles cool on the baking sheet for 2 minutes to firm, then transfer to a cooling rack. They will crisp as they cool. If you want curved crisps, drape warm tuiles over a rolling pin or bottle immediately after removing from the sheet and allow to cool into shape.

House Caesar Dressing

Combine base ingredients

In a medium bowl, whisk together mayonnaise, Greek yogurt (if using), lemon juice, Dijon mustard, Worcestershire sauce, anchovy paste, and minced garlic until smooth.

Incorporate cheese and oil

Whisk in the grated Parmesan. Slowly drizzle in the extra-virgin olive oil while whisking to emulsify the dressing and create a slightly creamy texture.

Season and adjust

Season with salt and freshly ground black pepper. Taste and adjust acidity or salt: add a little more lemon juice for brightness or a pinch more salt if needed. The dressing should be bright, savory, and slightly tangy.

Salad Assembly

Toss lettuce with dressing

Place the torn Romaine lettuce in a mixing bowl. Add 2–3 tablespoons of the prepared Caesar dressing and toss gently to coat the leaves evenly. Add more dressing if desired, but for a side salad keep the coating light so the lettuce remains crisp.

Add toppings

Transfer the dressed Romaine to a serving bowl or plate. Sprinkle the shaved Parmesan and seasoned croutons evenly over the top.

Finish with tuile crisps

Garnish with 1–2 Parmesan tuile crisps (broken into pieces if desired) placed on top or on the rim for crunch and presentation.

Serve immediately so the lettuce stays crisp and the croutons remain crunchy.
