Preheat the oven to 425°F (220°C). Spread the crushed rock salt in an even layer on a large, rimmed baking sheet to create a stable bed for the oysters — this keeps them level while baking.
Shuck the oysters: hold each oyster with a thick towel or use an oyster glove, insert an oyster knife at the hinge, twist to pop, run the knife under the top shell to sever the muscle and remove the top shell. Run the blade under the oyster to free it from the bottom shell but keep the oyster and its liquor in the half shell. Arrange the oysters on the prepared salt bed, spacing them so they sit level.
Reserve the half shells if any are empty and discard shells that are broken or smell off. Keep the oysters chilled until you are ready to top and bake them.
Topping (Spinach, Aromatics & Bacon)
Prepare Spinach
If using fresh spinach: heat a large skillet over medium heat, add 1 tbs butter, add spinach and wilt until just soft (about 2 minutes). Transfer to a sieve and press or squeeze out as much liquid as possible. Chop finely. If using frozen: thaw fully and squeeze out all excess moisture, then chop if needed.
Stir in the finely chopped crisp bacon, heavy cream, Worcestershire sauce, Tabasco, grated Parmesan and Gruyère (or Pecorino), chopped parsley, salt and pepper. Mix until a cohesive, slightly creamy mixture forms. If the mixture seems too dry, add up to 1 tbs more cream. Taste and adjust seasoning.
Fold in the breadcrumbs to absorb slight moisture and provide a bit of crunch after baking. Remove from heat and let cool for 3–5 minutes so topping firms slightly (easier to portion onto oysters).
Assembly & Baking
Spoon about 1 heaping teaspoon (or roughly 1/2 to 3/4 tbs) of the spinach-bacon-cheese topping onto each oyster, pressing lightly so the topping adheres but does not overwhelm the oyster. Aim for an even layer that covers the oyster meat.
Lightly dot each topped oyster with a small amount of melted butter (about 1/8 tsp per oyster) and sprinkle a pinch of additional grated Parmesan and a few crumbs on top for color and crispness.
Place the baking sheet with the oysters into the preheated oven and bake until the topping is bubbling and lightly browned, about 8–10 minutes. For a crispier, browned finish, switch to broil for 1–2 minutes, watching closely to avoid burning.
Remove oysters from the oven and let rest for 1–2 minutes. This allows juices to settle and topping to firm slightly.
