Spicy Ranch Aioli

In a small bowl, combine mayonnaise, sour cream and buttermilk. Whisk until smooth.

Add lemon juice, minced garlic, dried dill, dried parsley, smoked paprika, hot sauce, cayenne, salt and pepper. Whisk again until well incorporated and smooth.

Taste and adjust heat or acidity as needed (add more hot sauce for heat, more lemon for brightness). Refrigerate for at least 15 minutes to let flavors meld while you prepare the beans.

Trim the green beans: wash and trim the stem ends (and any tough tips). Pat dry thoroughly with paper towels — excess moisture prevents a crisp batter.

Lightly dust the beans: place the extra 1/4 cup flour in a shallow bowl, season with a pinch of the salt and pepper, then toss the green beans in the flour so each bean has a light coating. Shake off excess. This helps the batter stick.

Make the batter: in a medium bowl whisk together 3 tbs flour, cornstarch, baking powder, 1 tsp salt, 1/2 tsp black pepper and 1/2 tsp garlic powder. In a separate small bowl beat the egg, then whisk it into the dry mix. Gradually whisk in the cold sparkling water until a slightly thick, smooth batter forms — it should coat but still be a bit runny. Keep batter cold; if desired, place bowl over a larger bowl of ice.

Heat the oil: pour oil into a heavy-bottomed skillet or pot to a depth of about 1 to 1 1/2 inches (or use a deep fryer). Heat to 350°F (175°C). If you don't have a thermometer, test with a drop of batter — it should sizzle and rise immediately.

Batter and fry in batches: working in small batches (about 10–12 beans or enough to avoid crowding), dip the floured green beans into the batter, letting excess drip off. Carefully lower into the hot oil. Fry until golden and crisp, about 2–3 minutes, turning once so they brown evenly.

Remove and drain: use a slotted spoon or spider to transfer fried beans to a paper towel–lined tray. Lightly season with a pinch of salt while hot. Repeat with remaining beans and batter. Maintain oil temperature between 325–350°F; adjust heat as needed.

If you want extra-crisp texture, double-fry: after the first fry, let the beans rest for 2 minutes, then return to hot oil at 375°F (190°C) for 30–45 seconds until extra-crisp and golden. Drain again.

Arrange the fried green beans on a platter, sprinkle with chopped parsley and serve with lemon wedges on the side.
