Prepare vegetables

Wash and dry the mixed salad greens thoroughly using a salad spinner or clean kitchen towels. Halve the grape tomatoes. Peel (optional) and thinly slice the cucumber. Julienne or shred the carrots.

Assemble salad

In a large mixing bowl, combine the dried salad greens (4 cups), halved grape tomatoes (1 cup), sliced cucumber (1 cup) and shredded carrots (1 cup). Toss gently to distribute ingredients evenly.

Add cheese and croutons

Just before serving, sprinkle the shredded cheddar-jack cheese (1 cup) over the top and scatter the croutons (3 tbs) evenly across the salad.

Lemon Dijon Dressing

Make dressing

In a small bowl or jar, combine fresh lemon juice (2 tbs), Dijon mustard (1 tsp), honey (1 tsp), white wine vinegar (1 tsp) and minced garlic (1 clove). Whisk or shake to emulsify while slowly streaming in the extra-virgin olive oil (3 tbs) until the dressing is smooth and slightly thickened.

Season dressing

Taste and season the dressing with salt (1 tsp) and freshly ground black pepper (1/2 tsp). Adjust acidity or sweetness to preference by adding more lemon juice or honey in 1/4 tbs increments.

Dress the salad

Pour the dressing over the assembled salad (start with about half of the dressing) and toss gently to coat all ingredients evenly. Add more dressing to taste. Immediately top with shredded cheddar-jack and croutons if not already added, then serve.
