Prepare onions

Peel the onions and slice into 1/3- to 1/2-inch thick rings. Separate into individual rings and set aside. Pat rings dry with paper towels to remove excess moisture.

Make batter

In a large bowl whisk together the all-purpose flour, cornstarch, baking powder, kosher salt, black pepper, and paprika until evenly combined.

Wet mix

In a separate bowl whisk the eggs until smooth. Add the cold sparkling water to the eggs and whisk to combine. Pour the wet mixture into the dry mixture and stir until a slightly lumpy batter remains — it should be thick enough to coat but still pourable. If too thick, add up to 2 tablespoons more cold sparkling water.

Set up dredging station

Place the Panko breadcrumbs in a shallow wide dish. Arrange a wire rack over a baking sheet or another tray to hold coated rings before frying to prevent sogginess.

Coat onion rings

Working in batches, dip each onion ring into the batter, letting excess drip off, then press into Panko to fully coat. Place coated rings on the wire rack and repeat until all rings are coated.

Heat oil

Pour vegetable oil into a large heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (enough to float rings without touching the bottom). Heat the oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of batter into the oil — it should sizzle and rise steadily.

Fry rings

Fry the onion rings in small batches (4–6 rings at a time depending on pot size) for 2–3 minutes per batch, turning once, until golden brown and crisp. Maintain oil temperature between 335–355°F (170–180°C) for even cooking; allow oil to return to temperature between batches. Use a slotted spoon or spider to transfer fried rings to a paper towel–lined tray to drain excess oil.

Finish and keep warm

To keep rings crisp while frying remaining batches, place drained rings on a wire rack in a 200°F (95°C) oven for up to 20 minutes. Serve immediately for best texture.

Chipotle Aioli

Combine the mayonnaise, minced chipotle peppers in adobo, lime juice, grated garlic, smoked paprika, honey, and kosher salt in a small bowl. Whisk until smooth and well blended. Taste and adjust seasoning: add more chipotle for heat, more lime for brightness, or a pinch more salt if needed.

Cover and refrigerate the aioli for at least 15 minutes to let flavors meld before serving alongside the onion rings. Bring to cool-room temperature for 5 minutes before serving if the aioli is very cold.
